Flavour Profile
Origin
Punjab, India (and wider Indian subcontinent)
Bhuna is a cooking technique originating from North India and Pakistan, where spices are dry-roasted and then cooked with meat or vegetables in their own juices. This slow cooking process intensifies the flavours, creating a rich, thick sauce. Chicken Tikka, conversely, has Punjabi origins where chicken pieces are marinated in yogurt and spices and cooked in a tandoor (clay oven).
The warmth builds gradually, peaking with a pleasant tingle on the palate that lingers gently, inviting another spoonful.
A rich and inviting aroma of slow-cooked tomatoes and onions, infused with aromatic spices like cumin and garam masala.
Chef's Tips
- —Serve with warm garlic naan bread or fluffy basmati rice to soak up the rich, flavourful sauce.
- —A sprinkle of fresh coriander leaves at the end enhances the aroma and adds a touch of freshness.
- —Pair with a side of cooling cucumber raita to balance the medium spice of the bhuna.
