Chicken Tikka Masala is the curry that built modern British takeaway, and it's the dish our kitchen is benchmarked against. Ours starts with chicken breast marinated overnight in yoghurt, ginger, garlic and a six-spice tandoori rub, then charred in the oven to lock in smoke before it ever meets the sauce.
The masala itself is built from scratch every morning — slow-cooked onion, fresh tomato, single cream, fenugreek leaf, a whisper of kasoori methi and ground spice. No paste, no shortcut bases, no powder gravy. That's why our Tikka Masala tastes rounded and warm rather than sweet and flat, and why it reheats in five minutes without splitting.
